Cabernet Sauvignon / 14.5% ABV / Maipo Valley, Chile

This is a selection of cabernet sauvignon vineyards along with some cabernet franc (3%) and petit verdot (2%), all from what used to be called Rosario and that is now known as the Fundo Tarapacá estate in the middle of Isla de Maipo. It's a classic cabernet with herb and spice notes and fruit in the background and ripe red fruit contained by electric acidity. A wine for beef empanadas.
